Greek Salad

Ingredients

  • 3 tomatoes, wedged
  • 1 medium red onion, thinly sliced into rings
  • 1 cucumber, sliced into thick half-moons
  • 1 green capsicum, sliced
  • 16 black or green olives
  • 200g block of feta cheese
  • 1/4 cup olive oil
  • Juice of ½ a lemon
  • 1 tsp Greek seasoning

Instructions

1. Cut the tomatoes into wedges, slice the onion into thin rings, and cut the cucumber into thick slices. Place everything in a large bowl, including the olives.
2. In a separate bowl, mix the olive oil, lemon juice, and Greek seasoning together. Let it stand for 5-10 mins.
3. To serve, cube the block of feta cheese and place it on top of the salad. Pour the dressing over the cheese and salad.
4. Enjoy!
