Greek Lamb Chops

These Greek Lamb Chops are marinated in olive oil, garlic, lemon, and Greek seasoning for a bold, fresh flavour. Baked with cherry tomatoes and topped with dill, they’re an easy yet impressive meal perfect for any night of the week.

Ingredients

  • 8 lamb chops
  • 1/3 cup olive oil
  • 2–3 garlic cloves, minced
  • Juice of 1 lemon
  • 2 tbsp Screaming Seeds Greek seasoning
  • Salt and pepper to taste
  • 1 punnet (200g) cherry tomatoes
  • Fresh dill

Instructions

1. In a bowl, combine the lamb chops, olive oil, minced garlic, lemon juice, and Greek seasoning. Mix well to coat the chops evenly, then let them marinate for 2-3 hours.
2. Preheat the oven to 220°C (200°C fan).
3. Place the marinated lamb chops in a deep-sided oven dish, pouring over any remaining marinade from the bowl. Season with salt and pepper.
4. Scatter the cherry tomatoes over the top of the lamb chops in the dish.
5. Bake in the preheated oven for 35 minutes or until the lamb is cooked through and crispy.
6. Garnish with fresh dill and serve.
