Whole Orange & Blueberry Cake
A simple, delicious cake anyone can make – just blitz the ingredients and bake!
Ingredients
- 1 whole orange
- 150g butter, melted
- 3 eggs
- ¾ cup caster sugar
- 1½ cups self-raising flour
- Fresh blueberries for topping
For the glaze:
- Juice of 1 orange
- 2 tbsp icing sugar
Instructions
- Preheat your oven to 180°C (fan-forced).
- Line a cake tin with baking paper and lightly flour the sides.
- Quarter the orange (leave the skin on) and place it in a food processor with the melted butter, eggs, sugar, and flour. Blitz until smooth.
- Pour the batter into the prepared cake tin and top with fresh blueberries.
- Bake for 40–45 minutes, or until a skewer inserted into the center comes out clean.
To make the glaze:
- Combine the orange juice and icing sugar in a small saucepan.
- Heat over medium-low heat, stirring, until the mixture reduces and becomes sticky.
- When the cake is baked, poke holes all over with a skewer. While the cake is still warm, pour the sticky glaze over the top.
