Whole Orange & Blueberry Cake

A simple, delicious cake anyone can make – just blitz the ingredients and bake!

Ingredients

  • 1 whole orange
  • 150g butter, melted
  • 3 eggs
  • ¾ cup caster sugar
  • 1½ cups self-raising flour
  • Fresh blueberries for topping

For the glaze:

  • Juice of 1 orange
  • 2 tbsp icing sugar

Instructions

  1. Preheat your oven to 180°C (fan-forced).
  2. Line a cake tin with baking paper and lightly flour the sides.
  3. Quarter the orange (leave the skin on) and place it in a food processor with the melted butter, eggs, sugar, and flour. Blitz until smooth.
  4. Pour the batter into the prepared cake tin and top with fresh blueberries.
  5. Bake for 40–45 minutes, or until a skewer inserted into the center comes out clean.

To make the glaze:

  1. Combine the orange juice and icing sugar in a small saucepan.
  2. Heat over medium-low heat, stirring, until the mixture reduces and becomes sticky.
  3. When the cake is baked, poke holes all over with a skewer. While the cake is still warm, pour the sticky glaze over the top.
