Traybake Chicken Kiev

Ingredients
- 4-6 chicken thighs
- 60g softened butter
- 2 tbsp Thai basil seasoning
- Zest of ½ lemon
- 40g panko breadcrumbs

- Lemon wedges
- Fresh basil
Instructions
- Preheat the oven to 220°C / 200°C fan.
- Line a baking tray with parchment paper and place the chicken thighs on it, smooth side down. Pat dry the chicken thighs with paper towels.
- In a bowl, mix the softened butter with the Thai basil seasoning until well combined.
- Spread the seasoned butter evenly over the top of each chicken thigh.
- In another bowl, combine the panko breadcrumbs with the lemon zest.
- Sprinkle the breadcrumb mixture over each chicken thigh, ensuring they are evenly coated and gently pat the crumbs to stick to the butter.
- Lightly spritz the breadcrumbs with oil.
- Place the tray in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown.
- Serve the traybake chicken Kiev with lemon wedges and a sprinkle of fresh basil.
Hints & Tips
- For a gluten-free option, substitute regular breadcrumbs with coarse gluten-free breadcrumbs. This one works well as a panko substitute.
- Opt for chicken thigh for its moistness during cooking. If using chicken breast, consider slicing them thinner by cutting through the middle before cooking.
