Ingredients

  • 2 eggs
  • 1 cup milk
  • 1 & 1/4 cups all-purpose flour
  • 1.5 tsp baking powder
  • 1 tsp vanilla extract
  • 2 tbsp brown sugar

To bake

  • 2 tbsp melted butter
  • Your favourite berries (e.g., blueberries, raspberries)

 

Instructions

TIP - Allow the pancake batter to rest for optimal texture. Ideally, prepare it the night before and leave it covered in the fridge. This resting period relaxes the gluten in the flour and allows the starch grains to absorb the liquid, resulting in a lighter, fluffier texture.

To make the pancakes

  1. In a mixing bowl, whisk together eggs and milk until well combined.
  2. Add flour and baking powder to the egg-milk mixture. Whisk until the batter is smooth and thick.
  3. Stir in brown sugar and vanilla extract until evenly incorporated.
  4. Cover and leave to rest in the fridge over night.

To bake the pancakes

  1. Preheat your oven to 220/ 200c fan. Line a 13x9 inch baking tray with parchment paper, greasing it with the melted butter. Pour the pancake batter into the tray, spreading it evenly.
  2. Scatter your favourite berries over the batter, distributing them evenly.
  3. Bake in the preheated oven for 10-12 minutes, or until the pancakes are puffed up and lightly golden.
  4. Remove the tray from the oven and let the pancake rest for 5 minutes.
  5. Slice the pancake into portions, drizzle with honey or maple syrup, and serve warm.

 

Hints and Tips

  • Allow the pancake batter to rest for the best texture. Leaving it over night in the fridge is the best option. However, it can be made in the morning but the mixture will need to rest for 1 hour in the fridge before baking.
  • Experiment with different types of berries or toppings for variety.
  • Serve with a dollop of Greek yogurt or a sprinkle of powdered sugar for added indulgence.
  • Great for breaky or smoko.
  • Store leftovers in the fridge for 3 days in an airtight container.
