Spiced Citrus Loaf

A deliciously moist never-fail loaf. It is quick to prepare and full of warming spiced flavour!

Product: Spice Tub Banana Bread Spice Mix

Ingredients

  • 180g butter, cubed
  • 1 cup brown sugar
  • 3 tbsp golden syrup
  • 1 cup milk
  • 2 cups plain flour
  • 2 tbsp Spice Tub Banana Bread Mix
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tsp bi-carb
  • 1 tsp baking powder

Icing

  • ½ cup icing sugar
  • 2 tbsp orange juice
  • ¼ tsp banana bread spice mix

Instructions

  1. Preheat the oven to 200°C/180°C fan. Line an 8x4 inch loaf tin.
  2. In a small saucepan, combine the butter, sugar, golden syrup, and milk. Bring to a low boil, then remove from heat, tip in the citrus zest and stir through, set aside.
  3. Sift the flour, bicarbonate of soda, baking powder, and Banana Bread spice mix into a large bowl.
  4. Stir in the butter mixture until just blended.
  5. Pour the batter into the prepared pan.
  6. Place in the oven and immediately turn down the heat to 180°C/160°C fan and bake for 45 minutes or until a skewer comes out clean.
  7. Once cooled, mix together the icing ingredients and pour over the top and leave to set. Serve cut in slices.

Hints & Tips

  • Don’t forget to turn down the heat when you put the loaf in the oven. This will give you a softer crust.
  • Feel free to experiment with different icing.
  • Store in the fridge for 4-5 days. Make sure to keep it wrapped in its baking paper and in an airtight container.
  • Suitable for freezing.
