Spiced Citrus Loaf
A deliciously moist never-fail loaf. It is quick to prepare and full of warming spiced flavour!

Ingredients
- 180g butter, cubed
- 1 cup brown sugar
- 3 tbsp golden syrup
- 1 cup milk
- 2 cups plain flour
- 2 tbsp Spice Tub Banana Bread Mix
- Zest of 1 lemon
- Zest of 1 orange
- 1 tsp bi-carb
- 1 tsp baking powder
Icing
- ½ cup icing sugar
- 2 tbsp orange juice
- ¼ tsp banana bread spice mix
Instructions
- Preheat the oven to 200°C/180°C fan. Line an 8x4 inch loaf tin.
- In a small saucepan, combine the butter, sugar, golden syrup, and milk. Bring to a low boil, then remove from heat, tip in the citrus zest and stir through, set aside.
- Sift the flour, bicarbonate of soda, baking powder, and Banana Bread spice mix into a large bowl.
- Stir in the butter mixture until just blended.
- Pour the batter into the prepared pan.
- Place in the oven and immediately turn down the heat to 180°C/160°C fan and bake for 45 minutes or until a skewer comes out clean.
- Once cooled, mix together the icing ingredients and pour over the top and leave to set. Serve cut in slices.
Hints & Tips
- Don’t forget to turn down the heat when you put the loaf in the oven. This will give you a softer crust.
- Feel free to experiment with different icing.
- Store in the fridge for 4-5 days. Make sure to keep it wrapped in its baking paper and in an airtight container.
- Suitable for freezing.
