Pizza Pasta

Ingredients
- 1 red onion, diced
- 1 green capsicum, sliced
- 200g mushrooms, sliced
- 300g pasta spirals (raw)
- 60g tomato paste
- 3 tbsp pizza pizzaz seasoning
- 1 can diced tomatoes
- 100g thinly sliced pepperoni
- 160g grated tasty cheese
- 200g grated mozzarella
- Fresh basil for serving
Instructions
- Preheat the oven to 200°C (180°C fan).
- In an oven-proof skillet, heat 2 tbsp of olive oil over medium-high heat. Add the red onion, capsicum, and mushrooms to the pan and cook for 6-8 minutes until softened.
- In a small bowl, mix together the tomato paste and pizza pizzaz seasoning with a couple of tbsp of warm water to make it pourable.
- Meanwhile, bring a large pan of salted water to a boil and cook the pasta according to packet instructions until al dente. Drain the pasta, reserving 2 tbsp of the pasta water, and set aside.
- Pour the tomato mixture over the veggies and stir to combine. Add in the diced tomatoes and pepperoni, reserving some slices for the top of the pasta bake.
- Simmer for 5 minutes to bring all the flavours together.
- Tip in the cooked pasta and reserved pasta water, mixing everything together evenly.
- Turn off the heat and top with both grated cheeses. Layer the leftover pepperoni on top and place in the oven.
- Bake for 10 minutes or until the cheese is melted and golden.
- Remove from the oven and leave to stand for 5 minutes before sprinkling with fresh basil and serving in bowls.
Hints & Tips
- Add any of your favourite pizza toppings such as olives, spinach, ham, bacon, or chicken.
- Replace pasta with gluten-free pasta to make this dish suitable for a gluten-free diet.
- Serve as it is for a fuss-free dinner or add some garlic bread and salad on the side to make this a more substantial meal.
- Store in the fridge for up to 3 days. Suitable for freezing.

This is yum! I thought my kids might actually enjoy this dish as it’s pasta and pepperoni which they enjoy, however I put extra spinach in it to bulk up the veggies and of course they turned their noses up at the green haha. But I quite enjoyed it.
