Satay Pork Tacos

Ingredients
- 8 Mini Tortillas (or 4 larger ones)
- 500g pork mince
- 2 garlic cloves, minced
- 1 tbsp ginger (fresh or paste)
- 1/3 cup (3-4) spring onions, thinly sliced
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- Pinch of chilli flakes (optional)
- Wild lime & macadamia satay sauce
For serving
- ¼ red cabbage, thinly sliced
- ½ red capsicum, thinly sliced
- 1 large carrot, grated
- Coriander
- Peanuts, chopped
- Lime wedges
Instructions
- Prepare all the veggies by slicing them thinly before starting with the tacos. The cooking process for the pork tacos is quick, and they cool down fast, so have everything ready beforehand.
For the Pork Tacos
- In a bowl, mix the pork mince with the garlic, ginger, fish sauce, soy sauce, and spring onion.
- Press a thin layer of the pork mixture onto the tortillas. Have them all prepared before you start cooking.
- Preheat a skillet or griddle over medium/high heat.
- Add a bit of oil to the pan and place one tortilla with the pork side down. Flatten it using a flat surface like a saucepan. Cook for 1-2 minutes, then flip to crisp up the other side.
- Remove from the pan and repeat with all the tacos. To keep them warm, place them in the oven at 120°C fan on a cooling rack to prevent them from becoming soggy.
To Serve
- Place the hot pork tacos on a large serving tray. Add 1-2 teaspoons of wild lime and macadamia satay to each taco, spreading it out.
- Top with the sliced veggies, fresh coriander, and chopped peanuts.
- Serve immediately with lime wedges on the side.
Hints & Tips
- For a gluten-free option, use your favorite gluten-free taco and ensure the soy sauce used is suitable for a gluten-free diet.
- Chicken mince or beef mince can be used as easy swaps, providing slightly different flavor profiles.
- Mix up the veggies to suit what you have on hand. Cucumber slices, lettuce, spinach, and mint would all be great alternatives or additions.
- For a fusion Asian/Mexican banquet, serve with additional sides such as spring rolls.
- Store leftovers in the fridge for 1-2 days. Not suitable for freezing.
