Mixed Green & Berry Salad
A simple and flavourful salad with berries and a tangy raspberry balsamic dressing, ready in just 20 minutes. This easy side salad is perfect for summer entertaining!

Ingredients
Salad
- 200g mixed lettuce leaves
- 1 cup blueberries
- 1 cup raspberries
- 1 cup sliced strawberries
- 1 avocado, sliced
- 1 cup chopped pecans
- 1 cup crumbled feta
Dressing
- ¼ cup olive oil
- 4 tbsp raspberry balsamic vinaigrette
- 1.5 tsp Dijon mustard
- 1.5 tsp honey
- Pinch of salt and pepper
Instructions
- In a large salad bowl, add all of the salad ingredients, reserving a few berries for decoration.
- In a small bowl, whisk together the olive oil, raspberry balsamic vinaigrette, Dijon mustard, honey and a pinch of salt & pepper to form the dressing. Taste and adjust seasoning as needed.
- Dress the salad to your liking, gently toss, and top with the reserved berries before serving.
Hints & Tips
- Lettuce: Use a mixed bag of lettuce for ease, or swap for your preferred variety.
- Nuts: Pecans can be swapped for almonds or walnuts.
- Cheese: Parmesan is a great alternative to feta.
- Make Ahead: Prepare the salad ahead of time, but add the avocado and dressing just before serving.
