Spiced White Chocolate Blondies

Ingredients
- 160g plain flour
- 1 cup brown sugar
- ¼ tsp salt
- ¼ tsp baking powder
- 125g butter, melted
- 2 eggs, whisked
- 1 tsp vanilla extract
- 2 tbsp Spice Tub banana bread mix
- 1 packet (200g) white chocolate chips
Instructions
- Preheat the oven to 180°C/160°C fan. Line a 9x13 baking pan with baking paper.
- In a bowl, combine the flour, sugar, salt, and baking powder. Set aside.
- In a small saucepan set over medium heat, or in a microwave-safe bowl in the microwave, heat the butter until just melted.
- Let it cool slightly, then add the eggs and vanilla extract, whisking until combined.
- Stir the butter mixture into the flour mixture with a rubber spatula until just combined. Avoid overmixing.
- Fold in the white chocolate chips.
- Spread the batter evenly into the baking pan and bake in the oven until it is just cooked on top, about 20-25 minutes. Start checking at 20 minutes.
- Allow the blondie to cool before cutting it into desired size pieces.
Hints & tips
- Reduce the spice mix to 1 tbsp for a milder Chai flavoured blondie.
- To make this suitable for a gluten-free diet, replace the standard flour with plain gluten-free flour.
- Be cautious not to overcook these blondies and dry them out. The residual heat will continue to cook the blondies, so even if they seem slightly underdone in the center, remove them from the oven. They will also solidify more as they cool.
- Store Spiced White Chocolate Blondies in an airtight container at room temperature for up to 1 week. They are suitable for freezing.
