Laksa Salmon Bake
A quick and easy Laksa Salmon Bake with a creamy coconut sauce, perfect for a healthy dinner in just 20 minutes.

Ingredients
- 4 salmon fillets (400-500g total)
- 1 can coconut milk
- 1 tbsp fish sauce
- Juice of 1 lime
- 1.5 tbsp Mingle Laksa seasoning
- 1 cup cherry tomatoes
- 1 cup trimmed green beans
- Fresh coriander for serving
- Extra lime wedges for serving (optional)
Instructions
- Preheat the oven to 200°C/180°C fan.
- Mix together the coconut milk, 1 tbsp Laksa seasoning, fish sauce, lime juice, and ¼ tsp salt. Pour into an ovenproof dish.
- Season the salmon with the remaining 0.5 tbsp of Laska seasoning.
- Place the salmon, tomatoes, and green beans into the Laksa mixture. It's okay if some of the veggies aren’t submerged in the sauce. Season with a little black pepper.
- Cook in the oven for 15 mins until the salmon is just cooked through and the veggies are tender.
- Sprinkle with fresh coriander and serve with extra lime wedges if desired.
Hints & Tips
- This dish is mild to medium in heat. Feel free to reduce the seasoning by not seasoning the salmon fillets before cooking or increase the heat with an extra 0.5 tbsp of Laksa seasoning in the coconut milk.
- Salmon is a great fatty fish that holds up well with the spiced creamy coconut sauce. You can easily swap it with other fish for a slightly different flavor/texture profile.
- Chicken could be used—thighs would be a great option. Sear them in a pan for 3-4 minutes on each side before cooking in the oven for 20 mins or until cooked through.
- Veggies could be swapped for what's on hand. Broccoli and capsicum would be great alternatives.
- Serve over a bed of rice or noodles.
- Store in the fridge for 2-3 days. Suitable for freezing.
