Char Siu Chicken with Egg Fried Rice

Ingredients
- 500g chicken thigh, skinless & boneless
- 2 tbsp Char Siu seasoning
- 4 tbsp soy sauce
- 4 tbsp honey
- 2 tbsp rice wine vinegar
- 1 portion of Egg Fried Rice
Instructions
- In a bowl, combine Char Siu sauce, soy sauce, honey, and rice wine vinegar. Marinate chicken in this mixture for 1 to 24 hours.
- Air Frying Method:
- Preheat air fryer to 200c.
- Line the bottom of the air fryer basket with a sheet of foil.
- Arrange marinated chicken in a single layer in the basket, ensuring no overlap.
- Cook in batches if needed to avoid overcrowding.
- Air fry for 15 minutes until cooked, checking for desired char.
- Oven Method:
- Preheat oven to 200c fan.
- Line a baking tray with foil.
- Arrange marinated chicken in a single layer on the tray, careful not to overcrowd.
- Roast for 20-25 minutes until cooked with caramelised edges.
- If desired, grill on high for 2-3 minutes for extra char.
- Remove chicken from air fryer/oven and let it rest for 3-5 minutes before cutting.
- Serve Char Siu chicken alongside Egg Fried Rice.
Hints and Tips
- For optimal flavour absorption, marinate chicken thighs overnight.
- Thighs work best in this dish as they stay moist in the high cooking temperature.
- Don't skip charring; it enhances the dish's flavour.
- Serve over Egg Fried Rice or plain rice with stir fried veggies.
- Store leftover Char Siu chicken in the fridge for 3-4 days after allowing it to cool.
